Process Selection

Process choice depends on the beverage’s microbiological risk, pH, particulates, alcohol content, and desired shelf life.

Hot Fill

Uses: teas, juices, functional still drinks.

Key Benefits:

  • Eliminates need for preservatives
  • Compatible with PET and glass



Considerations:

  • Heat can affect flavor profile
  • Requires heat-resistant packaging
Tunnel Pasteurization

Uses: carbonated beverages, RTD cocktails, lightly flavored waters

Benefits:

  • Post-fill thermal treatment ensures final-package safety
  • Works well with cans and some glass formats
 

Considerations:

  • Not ideal for heat-sensitive ingredients
Flash Pasteurization

Uses: juices, teas, functional beverages

Benefits:

  • Short heat exposure preserves flavors
  • Product filled at low temperature after treatment
 

Considerations:

  • Requires a sterile fill environment to prevent recontamination
Cold Fill

Uses: flavored waters, sports drinks, energy drinks

Benefits:

  • Protects sensitive flavors and nutrients
  • Lower energy use compared to hot fill
 

Considerations:

  • Requires chemical preservatives or high-acid formulations
Carbonation Processes

Uses: sparkling waters, sodas, alcoholic seltzers

Key Points:

  • Fill under counter-pressure
  • Requires packaging capable of holding pressure
  • Stringent CO₂ control affects mouthfeel and stability

Consideration:

  • Requires to consider the suitable gas volume if carbonated products need to undergo tunnel pasteurisation
